Harvest Cucumber Tomato Salad

This is an easy and refreshing recipe perfect to get you through the final heat of summer. No cooking required! This simple salad can always be made the night before; it will nicely soak up the flavor of the dressing! It’s heirloom tomatoes, homegrown cucumbers, fresh dill, tarragon, fresh sprigs of basil, a bottle of good olive oil, and red wine vinegar. A delicious and healthy classic!

INGREDIENTS:

  • 3 Heirloom tomatoes, sliced
  • 2 medium cucumbers, sliced
  • 1/2 cup of basil sprigs

Dressing:

  • 1/3 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 tablespoon of either prosecco or any white vinegar for brightness
  • 6-7 fresh garlic, minced
  • tarragon, chopped
  • dill, chopped
  • seasoning: garlic powder, onion powder, red pepper flakes, salt, and pepper.

RECIPE:

  1. Start with the dressing!
  2. *When I’m doing dressing, I love muddling all of the ingredients with a mortar and pestle set to really bring out all of the fresh flavor, this helps press the garlic!
  3. Mince all of your garlic, chop your herbs, prepare your seasoning, and measure out your liquids!
  4. Add your garlic, salt, olive oil and start muddling just the garlic for a few minutes to help infuse into the dressing a little.
  5. Add the rest of the dressing ingredients and mix together until thoroughly mixed!
  6. Set aside the dressing to sit for about 30 minutes, slice your vegetables, throw them into a bowl and add your sprigs of basil, add the dressing and toss the salad until totally combined!
